Aunty Kathy’s Slow Chili

Requires overnight soaking of beans.

Ingredients

  • 1-900 gram bag dried red kidney beans
  • 3lbs ground beef
  • 3 large onions
  • 3 - 28oz (large) cans stewed tomatoes
  • 3 tsp worcestershire sauce
  • 3 tsp sugar
  • 3 cloves garlic, minced
  • 3/8 tsp oregano
  • 1 1/2 tsp paprika
  • 3-6 tbsp chili powder
  • 1 1/2 tsp salt

Directions

  1. THE NIGHT BEFORE put dried beans in large pot and fill with cold water, soak overnight.

  2. The next morning add salt to water and cook beans, don’t overcook as they will get mushy.

  3. Saute beef and onions.

  4. Add all ingredients to large cooking pot and bring to a boil for 5 minutes.

  5. Simmer for additional 30 minutes minimum (longer will result in more mixing of flavor).
