Healthy Pumpkin Bread

Ingredients

  • 1 c. all-purpose flour
  • 3/4 c. whole wheat flour
  • 2 1/2 tsp. pumpkin pie spice
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs
  • 3/4 c packed brown sugar
  • 3/4 c. canned pumpkin
  • 1/3 c fat-free milk
  • 1/4 c. canola oil
  • 1 tsp vanilla
  • 1/3 c golden raisins (optional)

Directions

  1. Preheat oven to 350. Grease the bottom of a bread pan.

  2. 2) In a large bowl combine both flours, pumpkin pie spice, baking powder, baking soda and salt. In a med. bowl beat eggs with a fork. Stir in brown sugar, pumpkin, milk, oil, and vanilla. Add egg mixture all at once to flour mixture; stir just until moistened. Fold in raisins. Spoon batter into loaf pan.

  3. 3) Bake 50-55 mins. Cook on a wire rack for 10 mins. Wrap and store in fridge before slicing.
