Net Picnic Apple Fritters

These are a big hit each year at our annual church picnic. They are best served fresh and hot and do not keep well.

Serves 8 people

Ingredients

  • 4 Large Golden Delicious apples
  • 2 cups all purpose flour
  • 1/4 cup white sugar
  • 1 tbsp baking powder
  • 1 cup milk
  • 1/4 tsp ground nutmeg
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 2 eggs
  • 1/4 cup fresh lemon juice
  • 2 quarts vegetable oil for frying
  • 1 cup confectioner's sugar

Directions

  1. Beat milk, sugar, eggs. In a separate bowl, sift flour, sugar, spices and salt. Add wet ingredients to dry ingredients and mix well.

  2. Wash, peel and core apples. Slice into 1/2" slices. Toss in lemon juice to prevent discoloring. Heat oil until a small drop of water sizzles when dropped into water. Dip apple slices in batter with a long tined fork. Allow excess to drip off. Place in hot oil. Watch closely and turn when one side is just browned. When other side is brown take out of oil and put on serving platter. Put confectioner’s sugar into a large sieve and sprinkle over hot apple slices. Serve immediately.
