Ingredients

  • 2 1/2 pounds (7 to 8) apples (we recommend McIntosh)
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons lemon juice, or to taste

Directions

  1. Peel, core, and quarter apples.

  2. Place apples in a heavy saucepan with 1/4 cup water.

  3. Add the sugar and cinnamon.

  4. Cover and cook, stirring occasionally, for 20 minutes, or until very soft.

  5. If the apples start to dry out, add a little more water.

  6. Spoon the mixture into a food processor or blender and blend until fairly smooth but still a little chunky.

  7. Stir in lemon juice.

  8. Taste, adding additional lemon juice or sugar, if desired.
