Greek Pasta Salad I

Use Absolutely Fabulous Greek/House Dressing

2 oz. of dried pasta equals 1 cup of cooked pasta.

Ingredients

  • Absolutely Fabulous Greek/House Dressing for 10:
  • 1/2 cup olive oil
  • 1-1/4 teaspoons garlic powder
  • 1-1/4 teaspoons dried oregano
  • 1-1/4 teaspoons dried basil
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon Dijon-style mustard
  • 2/3 cup red wine vinegar
  • Salad:
  • 12-16 oz. box cooked tri-color rotiini
  • 4 campari tomatoes, chopped, or around 8-12 halved cherry tomatoes
  • 1 cup crumbled feta cheese
  • 1-1/2 (4 ounce) cans whole black olives, cut in half
  • 1/2 of a 3 oz. package sliced pepperoni (Hillshire Farms is good) cut into strips

Directions

  1. For Dressing: mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.

  2. Place all ingredients in a glass bowl with a top. Toss with dressing until evenly coated. Cover, and chill 2 hours or overnight.
