Chocolate Mocha Pot de Creme

Ingredients

  • 4 oz bittersweet chocolate, cut into very small pieces (as small as corn kernels)
  • 1/2 teaspoon instant coffee
  • very tiny pinch of salt
  • 1 cup heavy cream
  • 3 tablespoons plus 1 teaspoon sugar
  • 1/2 teaspoon vanilla extract

Directions

  1. Place chocolate in a heat-proof bowl. Add instant coffee and a small pinch of salt.

  2. Place cream, sugar, and vanilla in a saucepan and heat over medium heat, stirring constantly.

  3. As soon as it starts to simmer, take off heat and pour over chocolate. Let sit 1 minute. Whisk gently until creamy.

  4. Pour into 4 ramekins.

  5. Chill 5 hours.
