Asparagus Pie

Ingredients

  • 1 pound fresh asparagus, trimmed, cut into 2-inch pieces
  • 2 tbsp butter, plus extra for the casserole dish
  • 1/2 cup flour
  • 3/4 tsp sugar
  • 1 1/4 cup milk
  • 3 large eggs
  • 1 tsp chopped fresh thyme
  • 3/4 tsp salt
  • pinch of fresh ground black pepper
  • 1 tbsp lemon zest

Directions

  1. eheat 350.

  2. Mix flour, sugar, salt, pepper, thyme, milk with a wisk until flour is absorbed. Add eggs and whisk. Add lemon zest and stir.

  3. Melt butter until bubbly and a little brown, saute asparagus about 1 1/2 minutes until turns a darker green.

  4. Butter oval le creuset dish, pour in vegetables then batter.

  5. Bake 40-45 minutes. Cool until it collapses.
