Red Lentils and Rice

Serves 4 people

Ingredients

  • 1 lb Goya red lentils
  • 2 Tbs vegetable oil
  • 1 medium onion, chopped
  • 2 cloves of garlic, chopped
  • 1 Tbs grated fresh ginger
  • 1/2 tsp ground cumin
  • 4 cups water
  • 1 chicken boullion cube
  • 2 Tbs fresh chopped cilantro

Directions

  1. Sort and wash lentils; set aside. Heat oil in a large saucepan. Add onion and garlic. Cook until tender. Stir in ginger, curry powder and cumin. Cook and stir 1 minute. Add remaining ingredients and lentils. Bring to a boil. Reduce heat, cover and simmer 20 minutes or until lentils are tender. Add more hot water if necessary. Serve over cooked white rice.
