Jambalaya

Ingredients

  • 3 green bell peppers, diced
  • 2 onions, diced
  • 2 cans stewed tomatoes
  • 1 1/2 c uncooked rice
  • 3 c chicken broth or water w/ bouillon
  • 5 bay leaves
  • 3 T dried thyme
  • 1 c soy sauce
  • 1 t cayenne pepper
  • 2 T paprika
  • 2 t ground black pepper
  • 4 cloves garlic, minced
  • 6 boneless chicken breast halves
  • 2 lbs smoked sausage
  • 1 serving chorizo

Directions

  1. Dice chicken into bite sized pieces.

  2. Mix soy sauce, thyme, cayenne pepper, paprika, ½ of the onions and black pepper. Marinate the chicken for 3 hours.

  3. Bake chicken in marinade at 500 degrees for 10 minutes.

  4. Sauté vegetables and spices in chicken broth

  5. Cook sausage and chorizo depending on the variety.

  6. Boil rice.

  7. Put all ingredients together in a big pot and simmer for as long as you desire.
