Extreme Tomato Soup

This is a quick semi-homemade soup.

Serves 4 people

Ingredients

  • 2 cans tomato soup
  • 1 can beef stock
  • 1 can half and half
  • 1 T. Worcestershire
  • 1/2 t. dill
  • 1 t. dried basil
  • 1/2 t. thyme
  • 2 T. unsalted butter
  • Salt and pepper to taste
  • Parmesan cheese

Directions

  1. Put all ingredients, except cheese, into a sauce pan. Bring just to a simmer over medium heat, stirring frequently. Pour into bowls and garnish generously with freshly grated Parmesan.

  2. This is great with grilled cheese sandwiches.
