Mediterranean Quinoa

This is a beautiful, colorful salad. Rinse the quinoa carefully before you cook it to get rid of the saponin.

Serves 6 people



  • 1/2 cup red wine vinegar
  • 2 tsp olive oil
  • 2 cloves of garlic, minced
  • 2 tsp freshly ground pepper
  • 1/2 tsp salt
  • 2 medium green bell peppers, chopped
  • 1 cup of cucumber chopped
  • 1/2 cup kalamatas olives, pitted and sliced
  • 1/2 cup red onion, chopped
  • 1/2 cup parsely, chopped
  • 4 cups quinoa, cooked
  • Crumbled feta cheese


  1. In a glass jar or other sealed container, combine vinegar, oil, garlic, ground pepper and salt. Shake well.

  2. In a large bowl, combine bell peppers, cucumber, olives, onion, and parsely. Mix well. Add vinegar mixture and toss to coat. Fold in the quinoa and stir gently.
