Soba Noodles with Peanut Sauce

You can make the peanut sauce anytime and reheat just before serving. It may thicken up a little so you might have to add additional water to it.
The soba noodles should be made just before eating. Or you can make them in advance and add a little oil to them to prevent them from sticking together.

Ingredients

  • 12 oz of soba noodles
  • Peanut sauce:
  • 1/2 cup of peanut butter
  • 1/2 cup of water
  • 1 Tbs tamari
  • 2 Tbs rice vinegar
  • 1 Tbs of rice syrup (or other sweetener)
  • 2-3 cloves or garlic, minced
  • 1 inch of ginger, minced
  • pinch of cayenne pepper (or more to taste)

Directions

  1. Boil the soba moodles for approximately 7 minutes or until done.

  2. To make the peanut sauce: bring the water and peanut butter to a boil Whisk to combine.

  3. Add the rest of the ingredients and whisk to combine. Season to your taste.
