Corn Grits with Greens

Breakfast anybody! The carrot juice along with the greens make for an absolutely nutritious dish! Tasty too.

Serves 2 people

Ingredients

  • 3 T. roasted pumpkin Seeds
  • 1/2 t. soy sauce
  • 2 cups carrot juice
  • 1 cup instant grits
  • 1/2 cup green onions
  • 1 T. olive oil
  • 3 garlic cloves
  • 2 bunches spinach
  • 1 bunch arugula
  • 1 t. vinegar
  • salt and pepper to taste

Directions

  1. Toast seeds until they begin to pop, about 3 minutes. Transfer to bowl and toss with soy sauce and salt.

  2. Bring carrot juice to a boil and stir in grits and 1/4 t. salt. Lower heat and cook, stirring occasionally until grits thicken, 6 min or so.

  3. Meanwhile, heat oil and add minced garlic and cook just until it begins to change color, about 2 min. Add greens and cook just until they begin to wilt. Stir in vinegar and serve on top of grits sprinkled with roasted pumpkin seeds.
