Cinnamon-Spiced Fish Tagine with Raisins and Capers

Ingredients

  • 1/8 teaspoon ground ginger
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 1 cup diced tomatoes
  • 1 tablespoon capers, drained
  • 1 tablespoon raisins
  • 1/4 tsp. cinnamon
  • 2 6 ounces firm white fish (mahi mahi?)
  • pinch of salt and freshly ground pepper
  • 1 teaspoon lemon zest

Directions

  1. In a heavy, oven-proof skillet over medium heat, cook ginger, paprika, and cumin for 1 minute until fragrant.

  2. Stir in oil, tomatoes, capers, raisins and cinnamon.

  3. Simmer, uncovered, for about 10 minutes.

  4. Pat the fish dry and sprinkle with salt and pepper.

  5. Nestle the fish into the tomato sauce, cover, and simmer until the fish is cooked through, about 7-10 minutes depending on thickness.

  6. stir in lemon zest, and serve immediately
