Kale Slaw with Red Cabbage and Carrot

Ingredients

  • 1 Tbs olive oil
  • 1 Tbs Dijon mustard
  • 1 tsp apple cider vinegar
  • kale, shredded
  • red cabbage, shredded
  • 1 carrot, julienned
  • 1/4 cup fresh parsley leaves
  • 2 Tbs red onion, diced
  • 2 Tbs sunflower seeds
  • 2 Tbs pumpkin seeds
  • salt & pepper

Directions

  1. In a small bowl, whisk 1 Tbs olive oil, 1 Tbs Dijon mustard, and 1 tsp apple cider vinegar. Season with coarse salt and pepper.

  2. In another bowl, combine 3 cups mixed shredded kale and red cabbage, 1 peeled and julienned carrot, 1/4 cup fresh parsley leaves, 2 Tbs diced red onion, and 2 Tbs each sunflower, pumpkin seeds.

  3. Season with coarse salt and pepper, drizzle with dressing, and toss to coat.
