Green and White Asparagus Salad

  • 1 bunch green asparagus, trimmed
  • 1 bunch white asparagus, peeled & trimmed
  • 2 small heads frisee lettuce, cleaned
  • parmesan cheese shavings to serve
  • 6 Tbs champagne vinegar
  • 2 Tbs wholegrain mustard
  • 2 Tbs honey
  • 1/2 cup olive oil
  • salt and pepper


  1. In a pot of boiling salted water, blanch asparagus for 3-5 minutes until just tender. Transfer to a cold water bath.

  2. Vinaigrette: Mix mustard, vinegar and honey. Slowly add the olive oil and mix until blended. Season with salt and pepper.
