Cheesy Broccoli Rigatoni

Ingredients

  • 12 oz. rigatoni or large tube pasta
  • 3 garlic cloves, minced
  • 1/4 cup all purpose flour
  • 1 tsp. salt
  • 2 1/2 cup milk
  • 1 tbsp. olive oil
  • 5 cups broccoli
  • 2 cups shredded mozzarella cheese

Directions

  1. Cook pasta according to package directions

  2. In large sauce pan, saute garlic in butter, stir in flour and salt, gradually add milk

  3. Bring to boil, cook and stir 2 minutes or until thick, remove from heat

  4. Drain pasta and toss in oil

  5. Add 1 inch water in sauce pan, add broccoli, bring to boil, reduce heat, cover and simmer for 4-5 minutes, drain and rinse with cold water.

  6. In 9×13 inch pan, coat with non stick cooking spray, layer 1 cup white sauce, half the pasta, and broccoli and 1/2 cup cheese, repeat layers, top with remaining sauce and cheese

  7. Cover and bake at 350 for 25-30 minutes or until heated

  8. May add chicken or shrimp
