Romaine, Beans and Corn Salad

Combine the flavorful romaine with filling corn and beans topped with a great dressing and all you need is homemade bread or crackers

Prep time: 20 minutes
Serves 6 people

Ingredients

  • 1 cup corn
  • 1 cup drained black beans or garbanzo beans
  • 1/2 cup chopped red onions
  • 1 chopped tomato
  • 1/2 finely diced cup red pepper
  • 1 sliced cucumber
  • 1 romaine lettuce, chopped
  • Marinade or dressing
  • 2 T. chopped cilantro
  • 4 T. lemon or lime juice
  • 1/2 cup olive oil
  • 3/4 t. ground cumin
  • 1 T. minced garlic
  • 1/4 t. black pepper
  • salt to taste

Directions

  1. Place all dressing ingredients in a blender and blend well. Combine the dressing with the beans (or garbanzos), corn, cucumber, red pepper, red onion, and tomatoes; Toss well and marinate for 2-4 hours.

  2. When ready to serve, add the marinated veggies to chopped lettuce and toss well to coat.
