Mock Potato Salad

Serves 6 people

Ingredients

  • 1 head Cauliflower (or one pkg frozen)
  • 1 Small Red Onion, finely chopped
  • 3 Eggs, hard boiled
  • 1/4 cup Finely Chopped Cucumbers (see recipe for Overnight Refrigerated Cucumbers)
  • 3 Tbsp Mustard
  • 1/4 cup Low Fat Greek Yogurt
  • 1 tsp Dill Weed
  • Sea Salt & Pepper, to taste

Directions

  1. If using fresh cauliflower, remove stems and heart, divide into bite sized pieces.

  2. Steam until tender and place in large bowl.

  3. Add remaining ingredients.

  4. Toss well to coat.

  5. Serves 6-8
