Ingredients

  • 500g new potatoes, halved
  • olive oil spray
  • 4 x 150g skinless chicken breast fillets
  • 1 lemon, cut in thin wedges
  • 1/2 cup black olives
  • 5 sprigs fresh thyme

Directions

  1. Preheat oven to 200°C. Place potatoes in a large baking dish and spray with oil. Bake for 20 minutes or until light golden brown.

  2. Add chicken, lemon wedges, olives and thyme to baking dish. Spray with oil. Bake for 25 minutes or until chicken is cooked through. Serve.
