Yogurt “Carbonara”

Ingredients

  • 1 cup (3 oz.) short pasta (penne works great)
  • 1/3 c. plain Greek yogurt
  • 1 egg
  • 3 tbsp. freshly grated Parmesan cheese
  • 1/4 tsp. salt
  • Pinch of ground cinnamon
  • Pinch of cayenne pepper
  • Freshly ground black pepper

Directions

  1. Bring a medium pot of salted water to a boil. Cook the pasta, following the package directions, until al dente.

  2. Meanwhile, in a small mixing bowl, beat together the yogurt, egg, 2 tablspoons of the Parmesan, and the salt, cinnamon and cayenne.

  3. Drain the pasta, and immediately add it to the yogurt mixture. Toss to combine. Top with the remaining 1 tablespoon Parmesan and a few grinds of black pepper.
