Country Potatoes with peppers

Ingredients

  • 4-6 bacon strips
  • 1 tblsp butter
  • 4-6 med red potatoes, diced small
  • 1 green pepper
  • 1 yellow pepper
  • 1 red pepper (all peppers deseeded and finely chopped)
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • salt and pepper
  • 1/2 grated parmesan cheese
  • chopped fresh parsley

Directions

  1. Cut bacon into 1 in pieces and saute until crisp remove from pan leaving grease and set aside

  2. Add butter to the bacon grease and melt over med to med-high heat.

  3. Stir in onions, potatos, garlic and peppers.

  4. Cook stirring occasionaly until potatoes are tender.

  5. Season to taste with salt and pepper

  6. When ready to serve sprinkle with bacon, parsley and cheese
