Sweet Onion and Rice Bake

Ingredients

  • 1/2 cup long grain white rice
  • 4 cups water
  • 3/4 tsp salt
  • 3 or 4 large sweet onions, sliced and rings separated (about 8 cups)
  • 1/2 cup Rich Chicken stock or canned low-sodium chicken broth
  • 1 1/2 cups grated swiss cheese
  • 1/4 cup milk
  • 1/8 tsp white pepper
  • 1/4 cup chopped fresh parsley

Directions

  1. 1) Preheat oven to 350 degrees F. In a large pot over high heat, boil rice in water with 1/2 tsp salt, 5 minutes. Drain and place rice in a 4-quart casserole dish, lightly coated with cooking spray or oil. Add onions, stock, cheese, milk, 1/4 tsp salt, and pepper and mix well.

  2. 2) Cover and bake until rice and onions are tender, about 1 hour. Stir in parsley.
