Twice Baked Potatoes

Ingredients

  • 4 med potatoes
  • 1/4 c. sour cream
  • 2 tbs milk
  • 1/4 c butter
  • 1/4 tsp onion powder
  • 1/3 c grated cheddar cheese

Directions

  1. scrub potatoes, cook in microwave 8 mins. Rotate. Cook 5-7 minutes more.

  2. When potatoes are fork tender, cut in half lengthwise; scoop out insides, salt and pepper shells

  3. Mash potato pulp of baked potato; beat in milk, sour cream and butter until fluffy.

  4. Stuff shells; sprinkle with cheese. Place in glass pie plate microwave for 3 minutes or until hot.
