Ingredients

  • 3/4 cup low fat sour cream
  • 2 oz. sharp cheddar or quesco fresco cheese, grated
  • 1 tomato, peeled, seeded and chopped
  • 4 scallions, thinly sliced
  • 2-4 pickled jalapenos, thinly sliced
  • 1/4 cup cilantro, coarsely chopped
  • 1/2 tp ground cumin
  • salt and black pepper

Directions

  1. Preheat oven to 400

  2. Combine all the ingredients and spread equally on tortillas.

  3. Bake, turning once, for 10 minutes, or until lightly browned and heated through.
