Easy, Healthy Chicken Fried Rice

A slightly healthier homemade substitute for expensive take-out that includes more veggies. We *never have leftovers when I make this!

Prep time: 10 minutes
Cook time: 15 minutes
Serves 4 people

Ingredients

  • 2 chicken breasts, chopped
  • 1 cup peas and carrots, frozen
  • 1 cup canned baby corn (or frozen corn)
  • 3 eggs
  • 2 tbsp soy sauce
  • 1 tbsp ginger
  • 4 cups cooked rice
  • 2 tbsp cooking oil
  • 1 tsp chili oil (optional)

Directions

  1. Heat oil in large frying pan. Cook chicken until heated through and no longer pink.

  2. Add vegetables and cook for 4-5 minutes.

  3. Add cooked rice.

  4. Stir in soy sauce and ginger (and chili oil if you desire a little heat), coating rice, chicken and vegetables thoroughly.

  5. Clear a small area in the center of your pan. Add the eggs and scramble until done. Stir to mix eggs throughout rice and serve.

  6. For a vegetarian option, omit chicken and add more veggies as desired.
