Stuffed Veggies

Serves 8 people

Ingredients

  • 1 lb chopped meat
  • 2 large or 4 small tomatoes
  • 4 small green peppers
  • 2 potatoes
  • 1 zucchini
  • 2 peppers
  • 1/4 cup rice
  • 2 eggs
  • Eggplant
  • Tomato sauce
  • parsley

Directions

  1. Cut tomatoes in half and scoop out seeds

  2. Cut zucchini in four pieces and scoop out

  3. Cut potatoes in four pieces and make holes

  4. Cut top off of peppers and hollow

  5. Cut thin slices of eggplant and fry

  6. Mix chopped meat with two eggs and parsley

  7. Cook rice and cool

  8. Stuff all veggies with meat (rice and meat together for peppers)

  9. Arrange on baking pan

  10. Cover bottom of pan with all of the scoopings

  11. Pour tomato sauce on top

  12. Bake in 350 degree oven until most of the liquid is absorbed and potatoes are cooked

  13. Arrange thin slices of fried eggplant on top
