Mozzarella, Tomato and Basil Bruschetta

Great way to use fresh tomatoes

Serves 20 people

Ingredients

  • 4 cups fresh cut tomatoes, set to drain
  • 1 cup fresh basil leaves
  • 4 Tablespoons extra-virgin olive oil
  • 6 cloves garlic, peeled
  • salt and fresh ground black pepper
  • 1 loaf farmhouse bread
  • 1 pound fresh mozzarella cheese, slice 1/4 "

Directions

  1. Preheat oven to 375 F

  2. In a bowl of a food processor, add tomatoes, 1 cup basil leaves, olive oil and 2 cloves garlic. Pulse until smooth, but somewhat chunky; season with salt and pepper

  3. On a baking sheet, line up bread slices and toast in oven until light brown (about 3 min). Rub remaining garlic on the toasted side of each slice and lay a piece of mozzarella cheese on top. Place bread back in the oven and melt cheese slightly, about 45 seconds.

  4. Remove from oven and spread two tablespoons of the tomato mixture on each piece.
