Chicken Tetrazzini

Original recipe called for cream but I have substituted low-fat milk.

Ingredients

  • 8 oz spaghetti
  • 1/2 cup flour
  • 2 3/4 cup chicken stock
  • 1 cup low-fat milk
  • 1/4 cup white wine or sherry
  • 2 cups cooked diced chicken
  • 1/2 cup parmesan cheese
  • 8 oz fresh mushrooms, sliced
  • 1 cup green pepper, chopped

Directions

  1. Cook spaghetti.

  2. While it is cooking, melt butter in saucepan and stir in flour.

  3. Gradually add chicken broth, stirring constantly until smooth.

  4. Add milk and cook until bubbly.

  5. Add wine, chicken, mushrooms, pepper, and spaghetti.

  6. Pour all into casserole dish and sprinkle with parmesan cheese.

  7. Bake on 350 for 30 minutes.
