Caprese quinoa salad

Ingredients

  • •1 batch of quinoa (1 cup dry, prepared and cooled)
  • •1 can garbanzo beans
  • •1 chopped tomatoes
  • •1 chopped cucumber
  • •2 medium diced cloves garlic
  • •5 large or 10 small fresh, sliced basil leaves
  • •1 tsp each of lemongrass & ginger paste
  • •Juice of 1-2 lemons
  • •2 diced baby carrots
  • •1 cup of broccoli sprouts (optional)
  • •1 cup chopped low fat mozzarella cheese (can also use feta cheese)
  • •Salt & pepper to taste
  • •Olive oil & balsamic vinegar, to taste

Directions

  2. Mix all ingredients together in a large bowl. Refrigerate for about 30 minutes before serving.
