Zucchini Lasagna

Ingredients

  • 3 medium zucchini squash
  • 1lb ground beef
  • Salt and pepper to taste
  • 8 oz canned tomato herb sauce (use the plain sauce and throw in some oregano, basil, and garlic.)
  • 16 oz cottage cheese
  • 8 oz Mozzarella cheese, shredded

Directions

  1. Peel and slice squash lengthwise, and boil in salted water until partially done. Set aside. Brown meat, adding salt and pepper to taste. Stir in tomato sauce and simmer 10 minutes. (It will seem very thick, but don’t add more sauce or tomatoes.) In a 2-quart casserole dish, layer meat sauce, squash, cottage cheese and mozzarella cheese. Repeat layers. Bake at 350 for 20 minutes or until casserole bubbles.
