Okra Gumbo

This calls for optional bell pepper and optional celery. I never use the bell pepper as my family does not care for it. I will occasionally use the celery. One of those recipes that I don’t really follow measurements, I just throw it together.

Ingredients

  • 3 cups sliced okra (or more) medium to large size pods
  • 2-3 tablespoons bacon grease (or olive oil or vegetable oil)
  • 1/2 large onion diced
  • 1 large clove garlic, minced
  • 1/4 bell pepper, chopped (optional)
  • 1 small stalk celery, chopped (optional)
  • 1 large can petite diced tomatoes
  • 2 heaping tablespoons sugar
  • 1 heaping tablespoon chili powder
  • 1 6 ounce can V-8 juice (optional)

Directions

  1. Slice okra about 1/2 inch thick slices.

  2. Stir fry okra and onion in bacon grease or oil in a sauce pan until it just barely starts to brown and seal in juices.

  3. Add garlic.

  4. Add optional bell pepper and/or celery.

  5. Add can of petite diced tomatoes. (Tip: If I happen to use more okra I will add extra liquid in the form of a 6 oz. can of V-8 juice.)

  6. Add chili powder and sugar.

  7. Cover and simmer until done, stirring occassionally, about 20 minutes.
