Texas Ranger Cookies

Ingredients

  • 1 cup butter (2 sticks), room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs, beaten
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup corn flakes
  • 1 cup rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup shredded coconut
  • 1/2 cup dried blueberries
  • 1/2 cup dried cherries
  • 1 cup chopped pecans

Directions

  1. Preheat the oven to 350 degrees; grease a 9×13 baking pan or a baking sheet.

  2. Cream together the butter, the granulated sugar and the brown sugar. Stir in the eggs and vanilla. Stir in the flour, baking powder, baking soda, cinnamon and salt, and mix until well combined. Stir in the corn flakes, the oats, the chocolate chips, the coconut, the blueberries, the cherries and the pecans.

  3. If making bar cookies, spread evenly the cookie dough in the baking pan and bake for 25 minutes or until edges are set and dough is lightly browned. Allow to cool for 15 minutes before slicing.

  4. If making drop cookies, roll dough into walnut-sized balls, place on baking sheet and bake one pan at a time for 15-17 minutes. Allow to cool on a rack for 15 minutes.
