Morel Mushrooms and Tomato Sauce

Ingredients

  • 2 cups hot red wine
  • 2 Tbsp. olive oil
  • 2 Tbsp. onion, finely chopped
  • 3 cups tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • 3/4 oz. Dehydrated morels, sliced
  • 1 Tbsp. unsalted butter
  • 2 Tbsp. garlic, minced
  • 3 cup white mushrooms, chopped
  • 1/4 cup fresh Italian parsley, chopped
  • 1 lb. penne pasta

Directions

  1. Soak morels in hot wine, set aside.

  2. In a large skillet, sauté the onion and garlic in the oil and butter.

  3. Add white mushrooms and cook for 5 more minutes.

  4. Add wine, morels, tomatoes, Italian parsley, basil, salt and pepper.

  5. Cook for 5 minutes more.

  6. Boil penne until tender.

  7. Drain and serve with sauce.
