Apricot and Banana Custard

Ingredients

  • 1/3 cup dried apricots, chopped (not treated with sulfur dioxide)
  • 1/3 cup boiling water
  • 1 small banana, sliced
  • 1 tbsp custard powder

Directions

  1. t the apricots into a small saucepan and cover with 3.5 tbsp boiling water; simmer for 2-3 minutes.

  2. Blend the apricots and cooking liquid together with the banana.

  3. Put the custard powder in a small saucepan and mix in a little of the boiling water to make a paste.

  4. Add the rest of the boiling water and stir briskly over medium heat until smooth and creamy.

  5. Mix the custard with the puree.
