Cheesy Leek, Sweet Potato and Cauliflower Puree

Serves 5 people

Ingredients

  • 1 tbsp butter
  • 1/4 cup leeks
  • 1 sweet potato, peeled and cut into chunks
  • 1 cup boiling water
  • 3/4 cup cauliflower florets
  • 3 tbsp grated cheddar

Directions

  1. Heat the butter in a pan and add the leek; saute for about 3 minutes or until softened.

  2. Add the sweet potato and boiling water and cook for 5 minutes.

  3. Add the cauliflower and cook for 5 more minutes.

  4. Strain the vegetables, reserving the cooking liquid.

  5. Puree the vegetables with about 1/3 cup of the reserved cooking liquid and the grated cheese.
