Spinach, Potato, Parsnip and Leek Puree

Serves 6 people

Ingredients

  • 2 tbsp butter
  • 1 1/2 cup leeks, white part only, washed and finely sliced
  • 1 1/2 cups potatoes, peeled and chopped
  • 3/4 cup parsnip, peeled and chopped
  • 1 cup boiling water or vegetable stock
  • 3 cups fresh spinach with tough stalks removed or 1/3 cup frozen spinach
  • 1/3 cup grated cheddar cheese

Directions

  1. Melt butter in a saucepan, add leeks and saute 2-3 minutes.

  2. Add potato and parsnip, saute for 1 minute.

  3. Cover with boiling water or stock; cover and simmer for 12 minutes.

  4. Add fresh spinach, if using, and cook for 3-4 minutes more.

  5. If using frozen spinach, cook separately according to package directions, drain and mix with potato, leek and parsnip.

  6. Drain the veggies, reserving the cooking liquid.

  7. Blend the veggies with about 3 tbsp cooking liquid and the cheese. Add more water if necessary.
