Fish with Cheese Sauce and Broccoli

Serves 4 people

Ingredients

  • 125 gram flounder or sole fillet, skinned
  • 3 peppercorns
  • 1 bay leaf
  • sprig of parsley
  • 2/3 cup milk
  • 1 1/2 cups broccoli florets
  • 2 tbsp butter
  • 1 tbsp flour
  • 1/3 cup grated cheddar or Edam

Directions

  1. Put the fish in a pan with the peppercorns, herbs and milk.

  2. Bring to a boil, then simmer, covered, for about 3 minutes or until the fish flakes easily.

  3. Strain the milk and reserve.

  4. Discard the flavourings.

  5. Flake the fish with a fork, checking carefully for bones.

  6. Meanwhile, steam the broccoli for about 5 minutes or until tender.

  7. Melt the butter in a saucepan, stir in the flour and cook over a gentle heat for 1 minute.

  8. Gradually add the reserved milk, bring to a boil and cook, stirring until thickened.

  9. Remove the sauce from the heat and add the cheese, stirring until melted.

  10. Puree the fish with the broccoli and cheese sauce.
