Poached Salmon, Avocado, and Cherry Tomato Salad

Ingredients

  • 2 3.5-oz salmon fillets
  • 1/2 cup water
  • 1/2 cup white wine
  • 1/2 shallot, sliced
  • 4 basil leaves
  • lemon zest, to taste
  • 10 peppercorns
  • large pinch sea salt
  • 1 Tbsp olive oil
  • 5 cherry tomatoes, quartered
  • 1/2 avocado, diced
  • 1 Tbsp cilantro, chopped
  • juice of 1 lemon
  • pinch cayenne
  • 1/2 tsp pink peppercorns, crushed with knife

Directions

  1. Poach the salmon; put fillets in saucepan with white win, shallot, basil, lemon zest, peppercorns, and salt. Turn heat on low until mixture simmers. Set timer for 3 minutes and test for doneness. Remove the salmon and let cool.

  2. Flake the salmon with a fork and mix it in a medium bowl with olive oil, cherry tomatoes, avocado, cilantro, lemon juice, cayenne, and peppercorns. Taste for seasonings and refrigerate 1 hour before serving.
