Chicken Curry with Apple

Ingredients

  • 1 tbsp vegetable oil
  • 1 small onion, peeled and chopped
  • 1 garlic clove, peeled and crushed
  • 2 chicken breasts, skinned and cut into chunks
  • 1 cup button mushrooms, quartered
  • 1 tbsp curry paste
  • 1 tsp tomato puree
  • 3/4 cup evaporated milk
  • 1 apple, peeled, cored and diced
  • 2 tbsp raisins
  • salt and pepper
  • 1 tsp lemon juice

Directions

  1. Heat the vegetable oil in a medium saucepan.

  2. Add the onion and garlic and cook for 5 minutes or until softened.

  3. Stir in the chicken and the mushroos and cook for 3-4 minutes, until the chicken is opaque.

  4. Stir in the curry paste and tomato puree and continue to cook for about 6 minutes, stirring throughout.

  5. Stir in the evaporated milk, apple, and raisins and cook for 10 minutes, stirring occasionally.

  6. Season with salt and pepper and stir in the lemon juice.
