Cucumber Yogurt Dip

Ingredients

  • 1.5 cups plain Greek yogurt
  • 3 Tbsp fresh dill, chopped
  • 2 Tbsp fresh mint, chopped
  • 2 Tbsp fresh chives, chopped
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 2 cups seedless cucumbers washed, peeled, and grated (or chopped, depending on preference)
  • 1/2 tsp black pepper, freshly ground
  • fresh dill and mint sprigs for garnish

Directions

  1. Combine yogurt, chopped dill, mint, chives, garlic, and salt. Stir the mixture well, cover and let sit for 15 minutes in refrigerator (or overnight). Before serving, fold in the cucumber and sprinkle the dip with pepper. Garnish with a slice of cucumber and dill and mint sprigs. Refrigerate any leftovers.

  2. If using seeded cucumber, cut lengthwise and scrape the seeds out with a spoon before grating.
