Red Pepper Risotto

Ingredients

  • 1/4 cup long grain rice
  • 1 1/4 cups milk
  • 1 red pepper
  • 1 zucchini
  • 1 - 2 stalks of celery

Directions

  1. Place the rice and milk in a pan, bring to a boil, then simmer, uncovered, for 5 minutes.

  2. Discard the core and seeds from the pepper and trim the zucchini and celery.

  3. Place the vegetables in a colander and rinse them under cold water, then chop the into small pieces.

  4. Add the vegetables to the rice mixture, bring to a boil, then cover and simmer for about 10 minutes or until the rice is soft.

  5. Puree or mash; use refrigerated portions within 24 hours.
