Cranberry and Nut Bread

Citrusy orange extract adds just the right background flavor to this moist and attractive holiday bread.

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons McCormick® Ground Cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/4 cup (1/2 stick) butter or margarine, softened
  • 1 cup milk
  • 1 egg
  • 1 1/2 teaspoons McCormick® Pure Vanilla Extract
  • 1/2 teaspoon McCormick® Pure Orange Extract
  • 1 cup whole cranberry sauce
  • 1/2 cup chopped pecans

Directions

  1. Preheat oven to 350°F. Grease and flour 9×5×3-inch loaf pan. Mix flour, baking powder, baking soda, salt and cinnamon; set aside.

  2. Beat sugar and butter in large bowl with electric mixer on medium speed until light and fluffy. Add milk, egg, vanilla and orange extracts; beat well. Gently stir in flour mixture. Fold in cranberry sauce and pecans. Pour into prepared pan.

  3. Bake 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool completely on wire rack.
