Coconut Muffins

Coconut lovers rejoice! Enjoy the rich, but not too sweet, coconut flavor in these golden muffins.

Ingredients

  • 3/4 cup flaked coconut
  • 2 1/2 cups flour
  • 3/4 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon McCormick® Ground Mace
  • 1 egg
  • 1 1/4 cups milk
  • 1/3 cup vegetable oil
  • 1/4 teaspoon McCormick® Pure Orange Extract
  • 1/4 teaspoon McCormick® Imitation Coconut Extract

Directions

  1. Preheat oven to 400°F. Lightly grease or line 12 muffin cups with paper baking cups.

  2. Spread coconut in shallow baking pan; toast in oven 7 minutes or until coconut begins to brown. Cool on wire rack. Increase oven temperature to 425°F.

  3. Sift together flour, sugar, baking powder, baking soda, salt and mace into large bowl; set aside. Beat egg in medium bowl; stir in milk, oil and extracts. Add to flour mixture along with coconut; stir just until dry ingredients are moistened. (Do not overmix.) Spoon batter prepared muffin cups, filling each cup two-thirds full.

  4. Bake 20 to 25 minutes or until toothpick inserted into muffin comes out clean. Serve warm.
