Wholesome Oat Muffins

Ingredients

  • 3/4 c and 2 T oats
  • 1 c buttermilk
  • 1 1/4 c white whole wheat flour
  • 1.5 t baking powder
  • 1/2 t baking soda
  • 1/4 t ground cinnamon
  • 1/4 t salt
  • 2/3 cup chopped walnuts
  • 1/3 c canola oil
  • 1 beaten egg
  • 1/3 c brown sugar
  • 1 t vanilla

Directions

  1. Soak oats in buttermilk and let soak 30 min.

  2. Combine all ingredients.

  3. ok in muffin pan 11 to 15 min at 425.
