Soy Broiled Carrot Tofu Medley

Ingredients

  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 1 teaspoon salt
  • 1 1/2 pounds carrots, cut into 2-inch lengths
  • 2 (12 ounce) packages extra-firm tofu, drained
  • 4 scallions, thinly sliced
  • 1-2 tablespoons rice vinegar
  • 1-2 teaspoons toasted sesame oil

Directions

  1. Adult: Preheat your broiler and prepare a baking sheet with a layer of aluminum foil.

  2. Kid: In a large bowl, whisk together the vegetable oil, soy sauce and salt. Add the sliced carrots to the bowl and toss to coat in the oil soy sauce mixture. Transfer the carrots to the baking sheet using a slotted spoon. Reserve the leftover marinade in the bowl.

  3. Together: Cut each block of firm tofu into 16 cubes. Add the tofu to the marinade a few pieces at a time, turning gently to coat and transfer to the baking sheet. Reserve the leftover marinade.

  4. Adult:Transfer the baking sheet to a broiler approximately 4 inches from its heat source. Broil for about 15 minutes, flip the carrots and tofu with a spatula. Continue cooking, stirring every 5 minutes or so, for 15 minutes more, or until the carrots are tender and the tofu has browned.

  5. Together: Transfer the tofu and carrots to the reserved bowl with marinade. Add the scallions, vinegar and sesame oil. Toss gently to combine and enjoy!
