Baja Chicken Quesidillas

Taste like Ruby Tuesdays “Baja Chicken Quesidillas”

Ingredients

  • 2 cups warm shredded cooked chicken
  • 2 large onion- sliced into thin strips
  • 2 large peppers- sliced into thin strips
  • 3 cups feta cheese, divided into 6-1/2 cup partitions
  • 6 tortillas (10 inch)
  • cilantro
  • basil
  • Oil
  • CHILI LIME SAUCE:
  • 4 small green serrano chiles, seeded and chopped finely
  • 1 cup lime juice
  • 2/3 cup chicken stock
  • 4 tablespoons fresh cilantro (coriander leaves)
  • 4 cloves garlic
  • 2 teaspoon sugar
  • 1/2 tsp salt

Directions

  1. Heat oil in pan over med-high heat

  2. Add onions and peppers and saute till they start to carmelize, about 7-10 min, set aside.

  3. Reduce heat to medium,add 1 tsp oil, place tortilla in the pan.

  4. Sprinkle 1/4 cup feta cheese over half of the tortilla, then top with onions and peppers, then chicken, then chili sauce, then add basil and cilantro to taste all on 1- 1/2 of tortilla.

  5. Pour 1/4 cup feta on top of chicken and onions and then fold tortilla over onto half covering the filling.

  6. Cook until quesidilla is golden brown on both sides.

  7. Repeat for all 6 quesidillas.

  8. Cut into 4 triangles and serve with salsa

  9. CHILI LIME SAUCE:

  10. Combine all ingredients in a blender and mix until smooth. Be careful handling the chilies. Pour into a saucepan and bring to a boil, stirring occasionally. Remove from heat and allow to cool. Use warm.
