Aloo Dum is a dish where the potatoes, usually smaller ones, are first deep fried, then cooked slowly at low flame in a curd based gravy with spices. Dum Aloo is a popular recipe cooked throughout India.

Ingredients

  • 1. Baby potatoes – 10
  • 2. Onion – 1 big(sliced)
  • 3. Garlic -ginger crushed- 1 tsp
  • 4. Green chillies – 2 (slit)
  • 5. Bay leaves – 2
  • 6. Turmeric powder – 1 tsp
  • 7. Chilli powder – 1/2 tsp
  • 8. Garam masala – 1 tsp
  • 9. Tomatoes – 1 (chopped)
  • 10. Salt – to taste
  • 11. Sugar – 1/2 tsp
  • 12. Oil – 3-4 tbsp
  • 13. Curd-
  • 14. Coriander leaves – 1/2 cup(chopped)

Directions

  1. Boil the potatoes and then peel off the skin. Rub ½ tsp turmeric and some salt on the potatoes.

  2. Heat oil in a pan/kadhai and fry the potatoes till they turn slightly golden brown and then keep aside.

  3. In the same oil add the bay leaves, onions, green chillies, sugar and the crushed ginger – garlic, sauté till the onions turn lightly brown .

  4. To this add the remaining turmeric powder, chilli powder and garam masala and sauté for 2 minutes.

  5. Now add the tomatoes and again sauté for 2 minutes.

  6. Add some water to get a thick gravy and also add salt along with it.

  7. Lastly add curd and mix well. When you get the required gravy consistency , check seasoning and remove from fire.

  8. Serve hot garnished with coriander leaves.
