Sukto is a traditional Bengali dish made many vegetables & at least one bitter vegetable with a pinch of sugar to adjust the bitterness. Without this typical Bengali menu is just incomplete. It is very popular in Bangladesh & West Bengal district in India.

Ingredients

  • 1. Bitter gourd : 100 gm (sliced)
  • 2. Potato : 1 piece (boiled & sliced)
  • 3. Brinjal/Eggplant : 1 piece (sliced)
  • 4. Radish : 1 piece (sliced)
  • 5. Raw banana (plantain) : 1 piece (sliced)
  • 6. Flat beans : 50 gm (cut out the two end points)
  • 7. Yard long beans/barbatti : 100 gm (cut into 2” long strips)
  • 8. Drumstick : 50 gm (cut into 2” long strips)
  • 9. Five spices : 1/2 tsp
  • 10. Whole mustard seeds : 1/2 tsp
  • 11. Mustard seed paste : 2 tbsp
  • 12. Ghee/clarified butter : 1 tbsp
  • 13. Oil : 9 tbsp
  • 14. Bori : 50 gm
  • 15. Dry red chilli : 1 piece
  • 16. Bay leaf : 1 piece
  • 17. Salt : to taste
  • 18. Sugar : 1/2 tsp
  • 19. Turmeric powder : 1/2 tsp
  • 20. Ginger paste : 1 tbsp

Directions

  1. Heat 4 tbsp of oil in a wok.
  2. Add bori to the oil. Fry till brown.
  3. Take out the bori. Keep aside.
  4. Add more 4 tbsp of oil.
  5. Add bitter gourd. Fry till golden brown.
  6. Take out & keep aside.
  7. Add raw banana, potato, radish, brinjal, flat beans, long yard beans, drumstick one by one in the rest of the oil. Stir for 3 minutes.
  8. Add salt, sugar, turmeric powder & ginger paste. Stir well for more 2 minutes.
  9. Pour 4 cups of water. Cover & cook for 5 minutes.
  10. Remove this vegetable mixture from heat & keep aside.
  11. Heat 1 tbsp of oil & ghee in a separate wok.
  12. Add bay leaf, dry red chilli, five spices, whole mustard seeds & stir aroma releases.
  13. Add the vegetable mixture & mustard seed paste.
  14. Add fried bori & bitter gourd.
  15. Boil till it thickens.
  16. Remove from heat & serve sukto with steamed rice.
