Ingredients

  • 1. Spinach (palak) : 2 bunches (chopped)
  • 2. Pumpkin : 100 gm (diced)
  • 3. Flat beans : 100 gm (chopped)
  • 4. Potato : 1 piece (boiled & diced)
  • 5. Bori : 10 pieces
  • 6. Brinjal : 100 gm (diced)
  • 7. Dry red chilli : 1 piece
  • 8. Five spices : 1/2 tsp
  • 9. Mustard paste : 1 tbsp
  • 10. Oil : 4 tbsp
  • 11. Salt : to taste
  • 12. Sugar : 1 tsp
  • 13. Ginger paste : 1 tsp
  • 14. Turmeric powder : 1 tsp

Directions

  1. Heat 2 tbsp of oil in a pan.
  2. Fry the bori till golden brown & keep aside.
  3. Add 2 tbsp oil to the rest of the oil.
  4. Add dry red chilli, five spices. Stir.
  5. Add pumpkin, flat beans, brinjal & stir fry till golden brown.
  6. Add salt, turmeric powder, sugar & stir well.
  7. Add ginger paste, spinach, potato & cover with a lid. Cook till the vegetables become tender.
  8. Uncover. Add mustard paste & stir till dry.
  9. Remove from heat & serve hot with steamed rice.
